Chanar Moti Polao
Ingredients:
- Chana 250 gram
- Ginger paste 2 -3 tsp
- Green chillies 10
- Jeera + dhania + red mirchi powder 2-3 tsp
- Garam masala powder
- Kismis
- Kaju
- almond
- Whole garam mosla
- Tejpata
- Milk
- Saffron
- Basmati rice 500 gram
- Maida 5 tsp
- Ghee
- Rose water
Procedure:

Soak almond and chopped it after peeling.
Wash rice for 4-5 times and soak for 1 hr.
Boil water, add salt , whole garam masala, add rice , once it is done 80 percent , drain the water.
Mash chana with ginger paste, jeera , dhania , red mirchi , garam mosla, salt and sugar, add little ghee and maida ,kismis and make smooth small balls, heat oil ghee together and fry balls. Fry all dry fruits.
In a large vessel spread rice , sprinkle garam masala powder, green chillies , rose water , and koftas, add remaining rice , dry fruits, saffron milk , ghee , rose water , and keep in dum for 30 mins.
Chingri jhuro
Ingredients:
- Prawn 350 gram
- Narkel 5-6 tsp
- Posto sarse paste 2-3 tsp
- Oil
- Green chillies
- Heat oil
Procedure:

Fry prawns slightly , before that apply haldi and salt to prawns. Don’t fry prawns. Heat mustard oil , add paste and prawns, green chillies, sugar, salt and a little lemon juice. Keep the flame high and fry till oil separates.
Mejbani mutton
Ingredients:
- Mutton 750 gram
- 1⁄2 cup fried onion
- 2-3 tsp ginger + garlic paste
- 3 tsp peanuts roasted and make paste.
- Haldi
- Red chilli powder
- Mejbani mosla 2-3 tsp
- Oil
- Sugar
- Green chillies.
- Doi 1⁄2 cup
- Whole garam mosla
Procedure:

Marinate mutton with doi , mejbani mosla , chilli powder, and oil for 2-3 hrs.
Heat oil in cooker , add tejpata , whole garam mosla , add mutton, fry it for 15-20 mins, add haldi, peanuts powder, beresta and fry again.
Mejbani mutton is slow cooked for 2-3 hrs . But if u wish u can pressure cook it with just 1-2 whistle , but don’t add much water as it is a thick gravy dish.
Anaroser chutney
Ingredients:
- Grated anaros
- Sugar syrup
- Kismis
- Ginger
- Lemon juice
- Salt
Procedure:

Make sugar syrup , add anaros , boil to medium consistency add kismis ,add a little grated ginger and lemon juice at end.
